Old Fashioned Sweet Potato Pie

(I've been making this dessert for many years, sometimes with a crust, sometimes without. The tiny bit of lemon oil (or extract) really adds alot to the flavor)

 

Servings: 8

 

Ingredients:

2 cups boiled SWEET POTATOES (about 3 large) mashed

1 cup milk

3 eggs, slightly beaten

1.5 cups sugar

1/4 tsp salt

1 tsp lemon oil or lemon extract

pinch nutmeg, freshly grated if possible

1  unbaked 9-inch PIE CRUST

 

Directions:

Preheat oven to 375

Combine mashed sweet potatoes with all other ingredients, Whisk well

Line deep dish pie plate with the crust and pour in filling

Bake for 1 hour or until a clean dry knife inserted an INCH from the edge comes out clean.

Don't overbake, the middle won't be set, but it will continue to cook after the pie is removed from the oven.
