Cold Brewed Coffee (Iced Coffee Concentrate)

I make this up on a regular basis and keep in the frig.  I like it because 'cold brewing' means there is no bitterness to the coffee at all.  You can heat it or ice it.  I like to mix it half and half with chocolate almond milk for an iced mocha on my way to the gym. whew! ya baby.

This recipe is from the Pioneer Woman, but I broke it into smaller quantities for our home.

 

6 oz fresh coffee grounds

3 quarts cold water

Instructions:

1. In a glass bowl (metal will give it an off taste and plastic, well, who wants plastic next to their coffee?), stir the grounds into the water. cover with plastic wrap and stash in the frig for 8-24 hours.

2. use a fine-mesh strainer over a 4 cup measure for the first filtering, and then a coffee filter folded into a funnel over a glass for the second filtering. Don't forget to put your grounds into your garden or compost bin!

3. store in the frig, use in 2-3 weeks.

4. to serve, pour the mixture over a glass of ice, adding milk and sweetener as desired. This can also be heated before serving.
