Spinach Balls
from the kitchen of Mary-Jeanine Ibarguen 2 packages frozen chopped spinach, drained 4 beaten eggs ½ C melted butter (or less) 1/2 C parmesan 1/2 tsp. salt 1 onion finely chopped 2 C herb stuffing mix (I use Pepperidge farm) Mix together and chill 15 minutes. Shape into balls. Put on greased cookie sheet: bake 15 minutes in 350 degree oven. One recipe is never enough at our house. They are also really good dipped in honey mustard. I just wanted to add that they freeze really well uncooked . You can make them up, flash freeze them on a cookie sheet, then put them in zippies in the freezer. That way you can pop a few (or whatever) in the oven whenever the mood strikes.
