Baked
Goat Cheese with Cranberry Relish
This is a wonderful appetizer
from Publix Aprons. Every time I make
it, it’s a huge hit and no leftovers. Keep
an eye out at Christmas time for the Publix Deli orange-cranberry relish; its
only available for a few weeks.

Ingredients
1/2 cup roasted, salted Marcona (or regular) almonds, finely
chopped
1 tablespoon fresh rosemary leaves, finely chopped (or 1
teaspoon dried)
1 log Deli goat cheese (8–10 oz)
1 (8-oz) container Deli orange-cranberry relish
2 tablespoons balsamic glaze
1 loaf Bakery crusty bread, thinly sliced (or plain pita
chips)
Steps
1.
Preheat oven to 350°F. Chop almonds and
rosemary; combine and place on a plate (reserve 1 tablespoon for later use).
Roll cheese in almond mixture; place in small baking dish or center of a pie
plate.
2.
Combine relish and glaze until blended;
pour around cheese and sprinkle with reserved nut mixture. Bake 20–25 minutes
or until cheese is hot and very soft. Serve with toasted bread slices or pita
chips.
Alternate Method:
Preheat oven to 400°F. Place bread slices on baking sheet;
coat with cooking spray. Chop almonds and rosemary. Combine relish and glaze
until blended. Spread about 1 tablespoon cheese on bread; top with relish
mixture. Sprinkle with nuts and rosemary. Bake 5–6 minutes or until warm and
toasted.
