Easy Chicken Enchiladas   

serves 8

 

Ingredients:

2 cups chopped cooked chicken

2 cups shredded Monterey Jack cheese (divided)

2 tbsp sour cream

1 (10-ounce) can milder diced tomatoes and green chiles (drained)

 

cooking spray

8  (7-inch) flour tortillas

1 (12-ounce) jar chicken gravy  (MJ makes gravy with a roux and chicken stock)

 

Directions:

1. place chicken in medium mixing bowl.

2. Stir in 1 cup of cheese and sour cream. Drain tomatoes thoroughly.

Reserve 2 tablespoons for topping and stir remainder into chicken.

3. Spray 8-inch square baking dish with cooking spray.

4. Spoon chicken mixture in center of tortillas. Roll tortillas around

mixture and place tightly in baking dish, arranging to fit, seam side down.

5. Spread gravy over enchiladas, sprinkle with remaining cheese and reserved tomatoes. Bake at 350 for 30 mins
