Southwest Pasta Salad
1 lb any type pasta
1 c corn
1 c black beans (rinse canned beans well.)
1/2 c fresh cilantro, chopped
1 (7oz) can diced green chilies
1/2 c black olives, chopped or 3/4 cup sliced olives
1 purple onion, chopped
Optional: roasted red or yellow peppers*, diced
Salt and pepper to taste
Cumin to taste
Chili powder to taste
Cook pasta al-dente in salted boiling water. Rinse pasta with cold water and
drain well. Add remainder of ingredients and toss.
Chill before serving. Serves 8.
* To roast the sweet peppers, clean and slice them, toss with 3 TBSP olive oil,
coarse salt and pepper. Place on a jelly roll pan or the bottom of your
broiler pan (something with a raised edge) and roast in a 425ۨº oven for 40
minutes, toss and turn them halfway at 20 minutes.
